So March 1st came and I weighed myself with our sweet new scale that I bought...219, whoohoo!! I was really excited that I had lost a pound because even though I'd been watching what I ate, I hadn't exercised much so that was pretty awesome. My son, Oliver, dragged the scale out on Tuesday so I decided to weigh myself just for the heck of it and I had to weigh myself three times to make sure I was getting the right number........216!! Whoohoo again!! I'm even more determined to start working out more, which hasn't exactly started, but oh well. I'll get it figured out someday!
As for the recipes I promised. I'm pretty sure I took some pictures with my phone but I'm feeling lazy so I'm going to just post the links to the recipes and tell you what I did differently!
This was so good! I doubled the spice rub, combined it with the olive oil and lime juice and let it marinate. Super good, but for sure I'm going to quadruple the spices, throw in some fresh garlic (I can quadruple the amount of garlic in a recipe and still want more), up the cayenne a bit, and douse it in lime juice right before and after I cook the chicken and it should be perfect!
I kept this pretty much the same, except I swapped out chicken breasts instead of beef. I didn't marinate it nearly long enough, though, but the chicken was super good. The marinade didn't sit on the chicken long enough for any other flavors but the orange to come through, so next time I'll make sure to prep this with enough time to marinate the 4 hours they say to. Oh and operator error: I didn't notice the recipe called for GROUND garlic, so I used fresh and didn't use nearly enough so next time I'll stick to ground or tons of fresh.
These are addictive!!! I loved them! The only thing I did differently was throw some lime juice into the mix, but you couldn't taste it enough. I can't decide if I want to add more next time, or toss them in lime juice after roasting them or just 86 the lime juice altogether.
This is so super good, I don't even change a thing. Except quadrupling the garlic, of course. I used the leftover chicken from the above recipe in the soup, but the taco chicken that the recipe calls for (The recipe for that is linked in the recipe for the soup) is to die for as well!
Oh and I've been doing a ton of smoothies, too! I do about a cup of juice, a cup of greek yogurt, berries and 3 cups of spinach and they are so delish. I've also been eating a lot of greek yogurt with honey drizzled on it which is amazing. I saw an idea on Pinterest to mix dry Ranch into greek yogurt and dip veggies into it which is totally happening, when I can remember to buy Ranch mix. Haha!
Uly and I have been battling this cough that we got from Oliver for literally a month. Oliver had it for maybe 2 weeks and we have had it for a MONTH, which is so unfair. I've been able to power through some workouts with mine, and we're finally starting to get better, but if poor Uly exerts himself at all he turns into a coughing machine and that's not a good thing. As soon as he's back to normal I'm going to have some competition! ;)
